Decaffeination methodology

Decaffeinated coffee has been around for over 100 years, but the production process has changed significantly over time. The decaffeination method plays a central role in the production of decaffeinated coffee. In this process, the fresh coffee beans are immersed in a highly compressed CO2 liquid, this process takes about 5 to 7 hours.
But what exactly happens during this process?

  • The caffeine molecules, which characterize the invigorating effect of coffee, are attracted and released by the electrons of CO2.
  • Charcoal filters are used to remove the caffeine from this liquid. These special filters are able to filter out the caffeine.
  • The next step is to remove the decaffeinated coffee beans from the CO2 liquid. CO2 plays a key role here: it neither affects the carbohydrates inside the beans nor their proteins. Those components that give the finished product its characteristic taste and aroma.

Overall, the method of decaffeination by soaking in highly compressed CO2 liquid enables the caffeine to be removed gently and effectively from the coffee beans. The special thing about this process is that no artificial chemicals are used. Decaffeination occurs naturally.
