But what exactly happens during this process?
- The caffeine molecules, which characterize the invigorating effect of coffee, are attracted and released by the electrons of CO2.
- Charcoal filters are used to remove the caffeine from this liquid. These special filters are able to filter out the caffeine.
- The next step is to remove the decaffeinated coffee beans from the CO2 liquid. CO2 plays a key role here: it neither affects the carbohydrates inside the beans nor their proteins. Those components that give the finished product its characteristic taste and aroma.
